Bajra Dhebra
Bajra dhebra is an ideal snack for the winters! Pair it with your evening cup of tea and you will say ki ‘yeh dil maange more :)’.
My mother-in-law introduced me to this dish, the hard-core Barodian that she is! She calls it Bajra vada. No matter what the name is, the dish remains delectable. And Rujuta Diwekar will love it too as it incorporates some of the nutritious winter foods that she has recommended for the season.
Let’s check the recipe out:
Ingredients:
Fresh Bajra flour (Pearl millet flour) – 1.5 cup
Wheat flour – 3 to 4 tbsp for binding the dough
Ginger – 1 inch
Garlic peeled – 6-8 in number
Green chillies – 3 to 4 as per your preference
Curd – 0.5 cup
Jaggery powder – 2 to 3 tbsp as per your preference
Turmeric powder – 1 tsp
Red chilli powder – 1/2 tsp
Til/Sesame seeds – 2 tbsp or more
Oil – 1 tbsp
Coriander powder – 1 tsp
Jeera powder/Jeera – 1 tsp
Dill leaves/Methi leaves – 1/2 cup finely chopped
Salt – to taste
Method:
Grind the green chillies, ginger and garlic together without adding any water to a coarse paste. Keep it aside. In a bowl, take the flours, add to it the dry spices, chopped greens, jaggery powder, oil and curd and mix it into a smooth dough.
Allow it to rest for 30 minutes
Make small balls from the rested dough and flatten it on your greased palm like a thick vada or dhebra (as is known in Gujarati) .Heat oil in a kadhai and deep fry the dhebras on a medium flame till they turn golden brown and crispy. Drain it on any absorbent paper and enjoy the snack.
